Listen to how the coins fall when you drop them in the slot. If it sounds hollow, the fruit machine is getting ready to pay out.

Note how fast the reels spin. The faster they are, the less likely they are to pay. The slower they are, the better for you. An empty machine runs better (faster) than one loaded with coins.

Note for irregularities in the way reels stop spinning. If two identical symbols come on the winning line and a third (or whatever) is nearby, note their speed. If the sequence was even, the fruit machine is ready to pay soon. If the sequence was uneven - that is, if the last reel was rather slow - then it is a trick to make you think it will pay when it won't. A fruit machine that is about to pay should be consistent. Any anomaly should be a warning sign to you.

For video slot machines, do not always aim for the jackpot. The big wins here are harder to come by as said already. Further they often pay out by way of additional features rather than good old winning combinations.

For video poker machines, look out for marked cards. Different cards have different marks on them. Obviously these machines can be manipulated if the marks are there. Cards 2, 3, 4, jack, queen and king are known to have unique marks on each one. When you find them, you can use the marks to decide which to hold and throw away.
